Lightning Returns, while not being a bad game by itself (although it's a bit low budget), requires knowledge from the previous 2 titles (XIII and XIII-2) and is not representative of the series.
FFX, while being very linear, still represents the series well, and FFX-2 is a fun title with good gameplay, although the story and characters are a bit silly. They are also very polished games, while Lightning Returns doesn't feel AAA at all.
If you've never played any of them, I'd also consider 7 or 4 on steam, or 6 (3 on the SNES) if you can get it elsewhere. The steam port is based on a mobile port for that last one and is a little sub par.

tl;dw: Get FF X/X-II
X/X-2 on the other hand are among my personal favorites. They're not without flaws (no FF is, really), but they're much, much, MUCH better than the PS3 ones.
X-2 is a great (if often corny) intro to ATB combat as well, as it tends to be on the easy side. Plus you can even capture dozens of different monsters and have them fight alongside/for you.
Port-wise, it runs well. I experienced 1 crash over my first playthrough, and subsequently none. That was at launch, too. Optimization... Its locked at 30fps, so its hard to compare.
