Did you have the Scorpion or Scarab with you guys? Also: who was commanding the ship, I assume that was you? It is indeed true that the use of the SRV doesn't always work, you may need to change the role of the helm. Or... what I once did: deploy the SRV yourself, get out and then let your dad enter it (this is of course assuming that you guys have Odyssey).
If you guys are playing Horizons then I think this is by design: only the ships pilot will be able to use the SRV, also because you'll only have the Scarab available and that's a one seater. Odyssey actually expands on this gameplay...
While landed on a port a friend of me took my SRV for a drive, I then took off from the base and landed near the edge and much to our surprise my friend could easily drive and dock the SRV onto my ship. It's really weird seeing 'your' SRV drive towards your ship and then get pulled into it ;)
Hope this could give you some ideas.
From what I understood you wrote that only the main pilot (multicrew) can use the SRV, but I, as the main pilot, could not use the vehicle either. Coming back to another part of the statement, I do not have Odyssey, and this is due to not very good opinions on steam, which does not change the fact that it may be worth spending these ... (quickly checking the price) less than PLN 80 (Btw I'm from Poland) on this DLC. So it is possible that looking at my language I did not fully understand what you wrote.
As a Multi Crew Co Pilot, you can not SRV´s, only fighters. The Co Pilot is only a Holografics and cant leav the Ship.
Odissey:
When you meet both at a Station (and Odissey is requierd) , you can create a wing. Than you can both Pilots walking at the lift and enter one Ship and fly together. In this part your Copilot can use fighters and SRV´s. Alsou can leave the ship per feet on the planets.
Some planets you need to disembark on the dark side, others on the sunny side.
(temp information is stated in the system view - planet information)
-the above applies if you boarded the ship/SRV physically, not by telepresence/multicrew.
