As to VA, there are a tonne of threads here on the forum, some of them very detailed and well explained, so search for them in order to read them in your own tempo.
All that the Oculus Touch option does is to emulate a regular controller (I.E. using the buttons and analog joysticks). None of the Motion control stuff is used. So while technically correct, i'm pretty sure that's not what OP was asking for.

I'd wager most people who've tried this game in VR ditched it because it's pretty much pointless without VR controllers support unless you're willing to spend 100 more bucks on a joystick just for one game.

And uhh.. you realize you would be able to control the characters hands and arms to CONTROL THE ACTUAL "Joystick" and throttle in the ships cockpit. Lmfao
I could see that, but since VR alone is expensive and most (good) HOTAS are also expensive.. and people already have controllers.. sooo
Yeah, also it's super comfortable to hover your hand still in the air with no arm support for a couple of hours, isn't it?
Even in space sim games that do have Touch Controller support (like X4) they completely bypass the on-screen Joystick and Throttle. The only VR flight sim i played that went with a Virtual HOTAS was Ultrawings, and that was pretty uncomfortable and sluggish, even when the fastest "ship" was a General Aviation cessna plane. I wouldn't recomment it.
Now that you mention it, and at a risk of going a bit Offtopic, do the guys in the Asetto Corsa or Project Cars Steam forums also complain of lack of Touch Controller Support? Is that like a thing they say? or it it only here?. Legitimately curious.
