There's a lot of RNG involved in the crafting bonus, and you could waste a lot of resources. But if you get a good roll, you could potentially end up with huge bonuses. For example, you could skill a saddle blueprint with 50 defense, and end up with a product which boasts over 100 def in the end. Or a weapon with greatly increased damage potential.
But yes, it's all dependant on RNG, you could potentially skill up and get nothing more than a 1% bonus, losing all the resources from the craft in the process. And skilling a character in crafting permanently would make them very weak in other areas.
Normally you dont put any points in crafting skill until you need to do a big crafting session, then use a mindwipe and put ALL points in crafting skill to give you the best chance of crafting high level items from your BPs.
There are mods to make it less tedious though, if one wanted to go down that route.

On official servers you can only use it ever 24 hours but many unofficial servers let you use it right away. If you're playing single player, there's a mod to make it even easier:

Basic idea is that when you want crafting skill, you want ALL of your points there and all other times you want no points there.
Not exactly; it speeds up crafting. But that's kind of a minor thing.
You wouldn't be putting points into crafting skill for the speed bonus, so its moot.
Next you'll say people wouldn't put points into food so they can eat more

Crafting skill is also very important for creating the custom consumable items; if you mindwipe to craft blueprints you should also make recipes for those.
