Now I play on console so your experiences may differ, but I regularly knock out carnivores while standing in the taming pen with them.
When the creature is trying to attack you and spends X time unable to get to you the AI concludes you are unreachable and tries to escape. The AI, not understanding it's in a trap, frantically tries to escape (dances). All the while never being able to register if/when you become reachable again. In my experience, once they are in this state they will almost never revert unless they are released from the cage and/or unrendered.

So that means, i need kind of a "tank" in the cage which is passive and stands in the direction of my cata right?! I thought about that too. that could be possible. But i thought, once it got aggro on me or some of my mates, it attacks also the structures, so why does the crab stop to attack our structures (in this case the cage)?
I honestly have never tamed a crab, or rock elemental, so I can't tell you if a tank would work. Sounds viable though.
Well i guess that's it. It cannot deal any damage to stone structures. So probably instead of a tank i could put a wooden pillar in the cage. As the crab can deal damage to wood i guess it should constantly attack this pillar (or it'll be a few). Guess i'll give it a try and will tell you if it worked or not.
However in my experience structure attacking can be a little tempremental, and I don't fully know what causes it to fail sometimes. Perhaps it's the layout of the structures which are blocking it, or something. I haven't tried taming a crab yet myself, but I know from experience with other dinos that sometimes they do make some wierd descisions which shouldn't really happen...
Another method is to kite the crab actively, with a paracer platform. One player rides the cow and the other shoots with the pult.
I have a feeling they snuck in an AI tweak to the crabs. A week ago one stuck like glue hammering away at a pillar I had down, where as a few days ago in preparation to tame one I made a small structure on the river where they commonly spawn, I notice them losing interest quite quickly. During the actual KOing it didnt spend long at all attacking the structure, I made sure it didnt have much room to move around to make hitting the body easier.
xD guess i'll give it a try like this too xD
