As it explains, you can refuse to reset the galaxy if you want. Resetting gives you the chance to travel to another galaxy, but you don't actually lose anything if you take that option. Your bases and all the systems you have explored can still be visited from the new galaxy. The only downside is that the tech in your ship, multitool and suit will all be damaged and need repairing, though you can avoid most of this if you equip a spare multitool and ship instead of your main ones, or you can package up the tech and store it in your inventory where it can't be damaged.

"A portal address is a string of twelve glyph characters. Just as an Earth address details streets and cities, a portal address details planets, star systems, and regions of space within a galaxy. Reading from left to right, the first character in a portal address is the Planet Index and it is the address for a specific planet or moon within the given star system. The next three characters combine as the Solar System Index, giving the address for a specific star system within the given region. The final characters combine as the Voxel position, which is the specific address for a region in a galaxy. The Voxel position can be further broken into Y, Z, and X coordinates with its eight characters representing height-width-length, YY-ZZZ-XXX (see Voxel Position section, below).
It is not necessary to have discovered all sixteen glyphs to use a portal for travel. Some addresses require only a few glyphs. The benefit to discovering all the glyphs is to have unlimited options."
it's is still valid option to leave the quest, and ask other players help to get other galaxies.
anyway, the one galaxy is absolutely huge, so there is enough to explore.
There was a time when changing galaxies was pretty permanent. Everything you did in the former galaxy was no longer accessible to you...except your freighter which you could call in.
You could never go back to Euclid unless you managed to go through all the galaxies (255 to 257 approx) to get back to the first galaxy so it was not something easy to do.
So they gave players the option to stay in Euclid for that mission. Now, it makes no sense to not see the final set pieces for the mission. It is easy to return to Euclid if you go forward. There is no actual consequence to resetting Atlas other then the lore knowledge you gain.
