(You can rename systems and planets btw, doesn't have to be an animal)
Pick galaxy core path, rotate in an arbitrary direction at least 45 degrees. Then warp again in the same general direction. Keep going in the same general direction until you find an undiscovered system, Its fairly early so we might find one ~1000 lys away.
or
Locate a black hole and go through it. Then look for undiscovered systems.
or
Learn a few glyphs, then portal to a random system.
or
Teleport to a featured base, and look for a system there.
Yeah I jumped about four times and found an undiscovered system I renamed. Thanks.
To my surprise, the first two animals I scanned (a squid and a shrimp) were undiscovered while the other 6 had already been discovered.

This happened to me in the third system. Sometimes the discovery servers gets bogged down and you don't get the most resent information.

Brand new Expedition save. Rode a tornado, fixed my ship, collected storm crystals and Crystallised Helium. Left the planet and flew to Resid Prime (ANY moon will work).
Landed at and activated a waypoint.

Placed my mouse over the waypoint image and pressed "X". Typed in the new name and pressed enter.

As we've observed in this thread, we sure can make it way more complicated.... but why?
Note: Yes, I changed my ship from a flying turd to an Explorer class. I also switch the difficulty to extreme survival with 500/1000 inventory slots.
