So what's the deal with those "Nexus missions"?
So my game was glitching. So I exited and went back in, and suddenly I was back at the Anomaly, not at the planet where I had put the restore point. And now I can't find the mission in my log any more.

What the heck are these things anyway?

The chatbot told me I need to do them in order to get terminals for my base, where I can hire NPCs. But maybe the A.I. is confabulating there. I'm trying to figure this out as I go.

NMS sometimes changes active quest to "Visit the anomaly", but rarely. And Nexus is the "heart" of the game, gives you a chance to earn rewards and Quicksilver.
The Nexus missions have to be completed in one sitting. You cannot save and reload during a Nexus mission. You'll find yourself back in the Anomaly as though the mission never happened.

Which is all fine and good, unless my game becomes unplayable unless I exit and restart.

What is blocking your progress atm ? Some prompts are not missions but annoying tutorials that will stay in your log forever and pop in when you don't want them to, and there's nothing you can do about it.

You can find and teleport to all your bases on any teleporter. you can also find previously visited space stations on teleporters.

What says your log atm ? (screenshot if possible)
If you are looking to hire staff or increase your reputation through the main story, you need to accept missions at the space station. All anomaly missions are optional and never part of the main story.

After you visit the anomaly for the first time, an NPC will tell you you can now access missions at the nexus.

As AA noted, of you restart from a nexus mission, it is over and you don't get the reward. You do get to keep all the stuff you collected before your reload.
