Gently bring your ship attitude back down straight and you should be oriented toward the North area of the planet. Look for a large body of water and boost toward the middle of that.
Once down, find an island and go underwater to begin your search. (May be my imagination) but the large predator fish will not show up until I have gone down to at least 50u underwater. Than I just scan and explore and keep an eye out for them to show up.
Typically, the last aquatic critter in N/S is going to be a predator, but not always.
When in cockpit view of a starship within the atmosphere of a planet, your x-y coordinates are shown on one of the displays.
On foot, you can see your position coordinates on the top right of the HUD when using your analysis visor [F].
If the 1st number is negative, you are in the southern hemisphere. If the 1st number is positive then you are in the northern hemisphere. You only need to be 0.01 over or under the equator to see hemisphere-specific fauna

I am a beginner, started playing now but used to play on PS4 some years ago, so I don't have a freighter yet, but sure will remind that when owning one =)
As for heading to North and South I have found that you have to go pretty far in either direction to get the fish to pop, be in deep water which is usually a large body with no islands nearby, easier now that we can land on water.

I usually just look at that and estimate how far I have to fly around the planet.
Being a biology/evolution nerd, I would like to see the fauna spawning rules tweaked to make a bit more ecological sense (e.g. predators spawn near prey, which spawn near their food sources), and to see different ecosystems a bit more defined (different grazers for different plants, with different predators, etc.). Could help with the tiresome "last underground critter" problem that crops up fairly often (e.g. if the whole thing worked a bit more as I've suggested, we'd be able to look for caves with different types of plants to those we've already explored, etc.).
Personally, I hope Worlds Part 2 (or 3) brings more varied biomes and ecosystems to planets, but have no idea whether that's at all likely.

Yeah, if you're looking for a rare fish, you need deep water (>40u deep). Thankfully, you can use the terrain editor to make the water deeper if you're struggling to find deep enough water... How far you can dig will vary from planet to planet though, so you may still have to find somewhere that's not too shallow...
