Any given specific mega-exotic[nomanssky.fandom.com] planet is also relatively rare, though mega-exotics as a whole aren't all that rare.
I think some of the oddball effects like planets touching or where the chroma is super messed up are interesting...although the chroma effects can make exploring super annoying since you can't see squat in the dark and it is not much better in the daylight.
The most rare thing I ever ran into was a player base that had gotten buried and broke into pieces during a reset (or maybe the player just went nuts with a terrain tool). In any case, it was fun excavating it to get a sense of what it must have looked like before it got crunched out. Unfortunately, did not take any photos or videos, but it was definitely the most unique thing I ever saw.
Look like oxygen runs out on every planet I've been. On those Earth-like, paradise etc. it goes very very slow.

Venus: plenty of boiling hell's with thick atmospheres, but never found one with no life at all.
Earth: no worlds, with green grass, trees, no crazy weather or overly strange life.
Mars: lots of desert worlds, no red planets with no life.
Pluto: lots of ice worlds, but no lifeless ones without seas.
For the various moons:
IO: lots of volcanic worlds, I did stumble on one with almost no life, but have never been able to re-find it. Have never found a volcanic dead world with no atmosphere.
Icy moons (Europa etc) - see Pluto
Titan: I've come close a few times, but NMS has a lot of life on ice worlds.
So if they are out there they are super rare.
Planets with dinosaurs
Planets with Blue Water, Blue Sky
Planets with Floating islands with waterfalls,
Planets with all the grass and trees having a light effect at night
Planets with some of this ^ from the list + no bad weather and no sentinels
