The only real downside is the lower convenience of gathering the materials needed to recharge things, but those radiant shards charge things from empty all the way to full with just 1 shard. It's not like you need to gather all that many, and the materials are ridiculously easy to gather.
I switched to an interceptor as my main ship on all of my actively played saves, and just built a base on a corrupted planet so that when I need to resupply any materials, it's quick and easy to go do it. I don't imagine I'll have to do it all that often.
BTW, they do not excel at hyper range. They look like they do, because just the core tech alone is so much better than a standard hyperdrive, but the ship type bonus for hyperdrive is the lowest bonus that the interceptor has. i.e. when fully upgraded, they fall far short of what a fully upgraded explorer can achieve.
Hyperdrive is basically their worst stat, despite how it looks when you find one with nothing but core tech. It's still decent though and it's twice as fuel efficient as a normal starship (twice as many jumps per full charge).

I shared the same concerns as you, and as Jaggid Edje said, the first thing I did when I noticed that the entire ship could essentially fly on just Radiant Shards was to set up a micro base with just a portal on the corrupted planet, so I could teleport back to it in a pinch, should I ever become stranded.
Now I have a bit more playtime, my B-Class Interceptor is now S-Class, and I don't regret a thing. I purchased an upgrade for the launch thrusters from the Anomaly which allows passive recharging while the ship is landed and I haven't had to refill the launcher manually ever since. The Hyperdrive also takes regular hyperdrive fuel in addition to Shards, and the shields can be recharged both with Shards or Sodium, however they cannot be recharged with the standard batteries other ships normally accept.
I'm keeping 2x10 Shards in the inventory anyway just in case, but it's very rare I need to use them unless I get caught in a full-scale Sentinel space battle.

Yeah but besides that, I've got a bit more playtime now, so I've figured the most effective way to get rid of sentinels is to just dig a hole in the ground before alerting them, then hide in it and use the cloaking device if they insist on detecting you.
No need to fight through the enormous waves all the time.
