How to get cool ship?
In Anomaly I see so many very cool ships, where can I get one? Such ships I never see landing in space station, and I don't think that it can be assembled from parts since half of the ships cannot be disassembled for parts as far as I know.

Expeditions mostly. Starborn Phoenix was a... christmas giveaway I think?

Solars aren't that rare; I think the first ones I saw were in pirate systems.

Exotics, squids are found in the normal game, but are rare.

Sentinel ships are found in dissonant systems; pretty easy to find if you know how. Ask if you don't know how.

If you are not interested in searching on your own, ...... do a search for No Man's Sky Glyph Exchange. You can customize what you are looking for
Depends what you mean by "cool ship". Quite a few ships are Expedition rewards but there's also Solar, Exotic, Sentinel and Living ships that can be obtained by playing the game. They're rare enough that you may not have encountered them during your gameplay if you're just starting out.

In the Anomaly, you're seeing the ships players chose to keep and use, so there's going to be a strong bias towards ships that are hard to come by or that other players consider cool.

I've considered just using a random shuttle I picked up early in my current save, and eventually upgraded to class S, to play with expectations. I wish I'd hung on to the starter ship for the same reason.

The No Man's Sky Wiki has details on the frequency with which ships appear. An interesting detail is that outlaw systems have a different frequency distribution than other systems: class C are more common at 85%, and the other classes are each 5%, which means that class B and class A are much less common but class S are more common than elsewhere, and as others have noted, solar sail ships are more common in outlaw systems.

For each system, there's a particular set of ships that you will see, including at least one exotic. So you can "save scum" by reloading the save from when you exit your ship, and see a random selection of that system's ship set land. Last I checked, you get slightly better results at a trading post than at a space station, because more ships land each time.
I try to keep my ship choice low-key, so people don't think I'm trying too hard. That's the only way to be cool. That, and handing out Donuts at the Nexus.
Work hard, get good grades, and hang out in a lot of high class systems- slightly better odds.
If you have access to the 'stargate' with its 16 glyphs, you can visit https://www.reddit.com/r/NMSCoordinateExchange/ for the coordinates of the ship style/type you like, then enter the glyphs for it and pretty much viola.
