Just equip your starship with aquajets, Find the ocean planet and choose a spot away from any coast (50u or more deep)
"land" your ship there, Exit on top of it, select the bionic lures and wait for the night.
In less than 5 minutes you will fish what is required.
You can even toggle autofishing in the settings to make things easier.
Fishing you can either sell the fish, cook it for use in your nutrient processor, or go into the water and release it for hefty amounts of nanites.
Can you precise what you dislike in the fishing mechanic? Seems pretty straightforward to me.
I agree that my luck on this expedition was probably in the lowest ranks. Took me about three hours and 59 fish to finally get the win. Waiting to dark was probably the advantage I did not worry about or it probably would have gone a lot quicker.
And maybe that is part of the problem for you OP, the fishing is super simple and amounts to pulling puzzle piece out a bag until you find the right one. Feels a little cheap right now but maybe they will refine it to make the actual process feel a little more skillful.
In fact, because of the nanite benefits, I almost never fish with lures, just so I will end up having to pull in A LOT of fish in the course of completing a goal.
Release all the extra fish for nanite rewards.

Picking up animal scat x 20 for irrelevant reward - Grrr.
Pretty sure this has not changed, but fishing in Expeditions does not count for the unlocks when back in a main save unless the Expedition was started as a new save and converted to normal at the end..
It is a serene thing to do when you just want to enjoy the scenery, get a nice screenshot. That's about it, for me.
