And I'm sorry, but just because you are tired of NMS, that doesn't mean it's a dying game... Plenty of people are only now playing it for the first time.
I only started playing last year.
Yes, I played a lot of it when I first started, and have now done enough that it feels a bit repetitive if I overplay it, but I have other games, so I just play those when I'm not enjoying NMS as much, then come back and continue to enjoy it when they release an update or run an expo...
If you think it's dead, then you should play something else for awhile, and let the people who enjoy it continue to do so...
Lets be honest some people just knock a game they do not like for whatever reason. Now some games deserve do be criticised. The ones that release too early and are a buggy mess, or are out and out cash grabs, or start good and then become cash grabs, or suddenly change their EULA to say that they can grab all your personal data etc.
NMS had a very difficult release. However instead of running away HG worked on it and continue to work on it. It has had dozens of free updates and runs the regular expeditions. All this takes time for the developers to produce. If that does not deserve the Steam labour of love award I don't know what does.
A lot goes down to personal preferences. I have games in my library that I bought, played and then thought, nope this is not for me, sometimes quite a long way though them. It does not mean the game is bad, its just I don't like it.
I've no idea if Hello Moto (OP) has found this thread useful, I just checked their profile again and saw they like Astroneer, a game I have not played but which appears to have some aspects similar to NMS. So I'll just add (since that game has multi player) that while NMS also has multi player it is somewhat glitichy due to the way it works. Your mileage will vary a lot depending on your interment speed and the internet speed of the players around you.
Oh yes and if you get the game turn PVP off, sadly gankers exist in NMS as they do in many other games. I still like NMS all the same.

sums up my experience as well. I can only add that building is (kinda) awful – be ready to suffer with poorly made UI in construction mode
also at some point the game may end up being "gotta have them all"-type of thing, as endgame-wise that's one of the most common things to do afaik
