Many love it, some hate it...
Do some research about the gameplay and make your own call.
Personally I really enjoy it. It's a chill game with lots to keep you busy, but nothing so deep that you'll be overwhelmed by it... It's a nice way to relax.
But if you want a story-driven action game, this is not going to scratch that itch.
This summer, I advised my work colleague to play. He is 50 years old. Now he doesn't delete the game from his computer either, and we have new topics for conversation at work =).
If you like sandbox games, then you'll like this one too.
I see you in the "favorite games" there is "Terraria". So you know about "Starbound", too. Well, roughly speaking, "No Man's Sky" is mail like "Starbound" but in 3D.
(I have 360 hours in "Starbound" and 560 in "No Man's Sky", so I know what I'm talking about).
The quest lines are rare and short.
All the universe(es) is(are) just copy paste.
Yes you can have hundreds of hours of fun. and visit thousands of planets. If you enjoy base building maybe even more, but the game itself is way too repetitive due to all the crazy amount of copy paste that is going on.
One would think that they could have introduced more quest lines, races, fractions, things to do in general and to find on planets and in space alike in seven years but it seems like all they knew is howto copy paste content with tiny changes.
The freedom is astonishing but it is basically meaningless because from some point on you will barely see something new.
Fraction reputation raises too fast, (Which might be a good thing because of the lack of variety in any regard.)
Combat on foot and in space is too easy after a short time already.
if you decide to go for it, make sure to buy it when it's on sale... you'll never regret it...

As suggested by @Guyver8 YouTube can be your friend here. NMS is a lot like Minecraft in that there is exploration, resource gathering, building - both useful tech, upgrades and bases - and aspects of survival. As mentioned above there is limited questing; which is why I query if you like Starfield as NMS is not a quest driven game. The games's story and reason things are how they are is there to discover, but it is short and I found rather unsatisfying.
The story and quests play as long-ish tutorials that introduce the various aspects of the game. Once you have completed them you are left with an almost infinite sandbox to explore and make your own story out of.
NMS gets regular free upgrades and there are regular expeditions which give ore goal oriented quests - some are running now.
I like it, it is unlike anything else out there.
Either way, it is a fun time, it's a good game to relax and enjoy yourself, the community is intelligent and willing to help.
All in all, a good game.
