Gas Giants
Anyone else disappointed with how they made the surface of these?

Somewhat. They're not really "gas giants", so they should've just called them something like "Titan-type planets".
I was not really expecting them, because by definition they are just gas... or pressures so intense it would be insane to put a man-made object on the "surface". They did the HG treatment, which is a lot more fantasy than science fact... and actually came up with a good method of "giving the dullards that wanted gas giants" a slight nod without making the rest of us completely sick.

I am okay with them..still not sure about the goofballs that cried for this feature.
why would they put planets that can't be explored to begin with?
Seems obvious enough that any planets implemented into NMS will have a surface to land on... (which is why I never understood people calling for gas giants in NMS in the first place)

The only activities that I've seen anyone suggested for a surfaceless gas giant are:
1. Flying through the atmosphere to collect gases. (we already have multiple methods of collecting gases, so this feels redundant)
and
2. Making floating bases... which can already be done if you have the patience to bother identifying the edge of the valid build area on a planet. (I often make such bases) I haven't made such a base on a gas giant yet, but I imagine the ground would be obscured from view due to the ever-present storms

I had no expectations. I wasn't one that followed the Threads begging for it. I noticed a bunch over the years mentioning it. Read a few, lots of hard science opinions parried with science fantasy.

Water world was my choice in the Atlas, but it didn't take me long to find a few Gas Giants in the Center of Euclid.

What I was most happy with about them was finding water on one and clustered S-Class Hotspots. The debris lightening tornado are very nice. I guess since I had no expectations I was very happy to see them.

Finding the moon is a PITA. Couching from them to the GG is a slog.

I presume you use 3rd person view in your ship?
If you use cockpit view, there is a radar that makes locating the moons/planets very easy even when they are behind another one...
