I have a lot of iron and cobalt and it's refined variants.
use your scanner to look for copper and other mining nodes

There are many. just worry about finding copper for now
Copper, Indium Cadmium and Emeril, plus the newly-released Quartzite. That being said if you're asking you probably just started the game, so Copper is your only option until you can access the other systems.

Extreme weather planets will have activated versions of the aforementioned with a transform rate of 1:1 into Chromatic Metal instead of the usual 2:1.

Okay. I interprete that, that copper is the easiest way to refine Chromatic Metal.
What is the easiest way to find a planet with copper deposits (other than just randomly fly around land on different planets till I find one)?
By far the most accessible especially early game. You need hyperdrive upgrades to be able to reach systems where other metals are found.

Chromatic Metal can also be found as a secondary element in some rocks but that's really up to RNG.

Using R/T on your Terrain Manipulator allows you to shrink/expand the extraction radius and because the mineral yield is fixed per tick, you gain a lot more metal from a single spot using a shrunk radius, even if it takes longer.

Simple refiner is enough for Chromatic Metal, you only need to put Copper in it.
Scan the planet. it will tell you all the information. what material it houses. and what kind of planet it is. freezing, scorching, dead etc.
You can scan the planets from space in your ship, this will show you the elements present on the surface. At the very least one in the system should have copper.

BTW:
I never found deposits of Cadimium, Emeril, Indium on planets. Till now I just bought them at space stations. Hence finding deposits of them and then even activated ones, would be double helpful for me. Thank you!

Cadmium is found in red star systems, Emeril in green star systems, Indium in blue star systems.
The blueprints for the special drives can be found in the Anomaly. The first one requires a lot of Chromatic Metal to be built, then they all require the previous metal to be crafted. I think it goes red>green>blue.

as long as you are not playing in abandoned mode you might be better off either buying copper and smelting it or buying straight chromatic metal at space stations I have found doing this is easier for the start of the game until you can get to better mining of better metals. with buying try to stick with incoming ships and not the trade terminal. if you have nanites try buying scanner upgrades first to help the money roll in just from scanning plants and animals
