How do you find MORE purple stars after anchoring the first one?
Opened restore point and everything...

The mission is done. I've anchored the first purple star system, got the title, mission complete, yadda yadda.

Either it's a color issue, or I'm blind or something.

So ioften in the galaxy map where blue and red stars look purple because of the hue of the region around them...

I've been moving around aimlessly looking for more purple stars to explore... and just cannot find them. Is there a trick to it?

Yes, tritanopia is very helpful. The new ones are easily recognizable. You have to relearn the replacement color for green systems cuz this option is for color blind (blonde:steamdeadpan:)
I would greatly appreciate if the colors of the stars in the galaxy map would be a little bit stronger. Red, blue and purple all look pretty similar.

the massive 'clouds' that are in the galaxy map are a pigging nuisance, you can't see what colour any of them are in that fog...
I think I an upcoming patch they said they would better distinguish the colors.

Apparently HG have tweeked the colours of stars on the map in experimental > https://steamcommunity.com/app/275850/discussions/0/595139573830433832/

'Improved the distinction between purple and red stars in the galaxy map.'

< not sure what the effect is though.

THIS is the biggest issue. Like just give me a toggle to have a 'minimal' galaxy map with no clouds / dust / decorative stuff. They mix with the colors of the stars to make new colors lol.

The tritanopia mode is helping me. It removes the clouds. But yeah, the colors are now different.
