Do you NEED to make an all-water world or can you find them without the quest?
I've got a fishing/deep sea save that I use to just relax and vibe out. So a deep underwater world would be perfect for them. But I haven't even finished the atlas mission so I would need to do that AND the autophage AND THEN start the worlds 2 mission.

unless y'all are finding full water worlds without all that. Personally I haven't found one yet but I'd be fine with continuing to explore if that's what it takes.

Deep sea worlds are only found in purple systems, to access all the purple systems though (without mods) you have to finish the new quest which is a follow up to the original autophage quest.

Same thing for the new terrain, gas giants etc - they're all in the purple systems. It's endgame content essentially.

I did find an essentially all water world in the 2nd purple system I explored. It has large straight up and down spikes occasionally sticking out of the water but no where to land unless you have the water landing addon.

I finally found one of the spikes with a small area I could land on the top. Maybe 20u round. I did build a base there because it was the only place I had found after a couple of hours of searching for a land landing spot. It is kind of cool being almost 200 meters up with straight drop offs on all sides.

Unfortunately the water is not super deep by the new standards. Maxed out a little over 300u deep. Still pretty cool and gave me a chance to test out the new pressure BP and exocraft deploy BP in my suit. They really re-worked the underwater flora and fauna on those planets. It is a nice change.

I wonder if maybe you need to go out farther than the spike to find the deep water sections. Can you see the depth in your nautilion?
Water landing isn't an issue. Rather getting to the purple system to begin with
