well that's sad...I read so much in the reviews that they improved the game...but if they still didnt fix such simple things, I'm afraid to think how awful the game was before...
Can't fix what isn't broke. The needed readouts in the hud turn on automatically when they change. If you don't see it you need not worry about it.
That IS broken. Or, to put the other way - inconvenient and wrong. Wrong because for example health you can have low, but it still doesn't show if it hasn't been reduced in the last few seconds. Easy to forget.
Ugly because it is very inconvenient to have constantly press a button to see basic information. For example, when I overfly a planet I like to see the temperature changes as I reach different sectors of it. But I cant because of this clunky UI...
However I cannot believe that no one implemented a fix to this yet. There are an option to tweak files/do addons in this game, yes? Maybe someone know of a solution
I never had issues with the health thing. But I can see how if it behaves like that, it is an issue.
But about checking the temperature changes and stuff like that. Have you noticed how to check the temperature where you are you need to pull out your phone? Like IRL? No even a counter to your point. It just seemed funny to me.

The thing is our "anomaly" MC is in bloody high-tech helmet in deep future. Obviously all indicators should be "on the screen" and easily visible, from that point of view. But they don't.
There is no point in implementing it like it is now, even from lore point of view.
I know that there are some casual people who play on lowest difficulty (normal) who don't really care about dying and such, who might not care about indicators and such.
But - as a programmer I know that to implement such option to "always have hud" as one tick in the settings menu is less than a day's work for one junior.
The fact that they haven't done it yet speaks volumes about them.
You can't, and that is the point.
All games should always have the option to remove all HUD because HUD is bad, always bad in any game... beside that, in NMS you can show your hud whenever you want by just pressing a button.
Try sending in a request, maybe they'll do it.
I've been looking for an answer to it, but all I'm finding is other people that also wish it was a thing...
it's not a bug, so no workaround needed
you had to necro a 2 year old thread to ask your question and even then most of the posts in this thread weren't asking for this 'feature'...
to clarify you can bring up the health display at any time by pressing a button, howto for keyboard and controller are in posts above
but if you want it... post your suggestion in the 'new feature suggestions' sub forum
