Seriously I usually get them from looting. Occasionally I see them on Trading Post (probably Gek system) from ship hunting.

They are still a thing in some places.
Edit - at one point early in the game you could craft it from platinum and plutonium but the devs keep changing things. If I'm not mistaken or if it hasn't been changed recently you can put nipnip buds in a refiner with faecium to produce nipnip which can be planted hydroponically and grows plants, that when harvested, produce Geknip.

It can be found in Damaged Containers or as monolith rewards.
It can also be bought from NPCs in Trading Posts.
It is a possible reward from frigate expeditions.
It is also a possible trade from wandering traders you encounter while using the Pulse Engine .
It is a possible reward from Practice Language with Geks
So, if you want to buy it. Some wandering traders you run into in space and at the trading posts can sell you Gek Nip. Good Luck!
I ended up buying it from the ships which landed at a Trading Post I visited in a Gek System for a different mission I also had.
