As for other things, there's quite a few player-made civilizations out there. Maybe try joining one for some more things to do. There's also the expeditions, of course. And you could fully upgrade everything (ship, freighter, exocrafts, etc.)
NMS is the equivalent of dynasty warriors but in space, and instead of fighting thousands and thousands of samey-ground troops, you scan thousands and thousands of samey planets and plants/lifeforms.
The best thing they could do was to add a story to follow, but once done you are fundamentally done, unless you enjoy to do the same thing over and over (jump to a different system, scan everything, sell everything you want to sell, move on to the next system).
As suggestion don't even bother with the main game mode; just pick creative and have fun finding out all that the game offer; that will save you from the grind, since you have everything unlocked. It is a fun mode to play with kids, or to just have some fun for few hours at time.
Maybe HG will add more story quests; or maybe an editor to make your own quests; that would be a nice thing to have
Yes, there is no end since everything is procedural. Although after a little bit, everything look the same; the objectives are the same, the things to do are the same. Unless HG add some variables that give you a reason to do the same things over and over, the thing get old pretty fast sadly.
- finding a nice s-class capital ship and maxing it
- frigate missions to get a full s-class fleet
- exploring derelict freighters
- building bases - style or efficiency or a mix of both
- maxing ships
- exploring the nms universe
- ...
one can visit hundreds of worlds and still can discover new worlds,....
The problem is the main game loop.
Finding a S ship class is worth only if you care and if you want to fight a ton of sentinels or pirates; I got to the "end" of the game with a modest B class not even maxed out. Same goes for the fleet frigate; they are ancillary at best.
Building bases is something that add nothing to the game functionalities beside being fun for a while; the base is just a big pile of cosmetics with some interactive stations; considering the amount of resources you need to grind to make a large one; the question is "why spend time doing that?"
I really don't get what cause people to be glad to see a different skybox or a different heightmap on a planet; when the gameplay loop is exactly the same. You may have infinite planets combinations that after the 20th system you explore, look exactly like some other combination you already saw before. You still use the mining tool to extract resources, still go to the same ground stations to sell stuff, still scan the same stuff over and over and over again. I guess this is what many like about NMS; scan stuff that look mostly the same? In that case yeah; NMS is a never ending game; you will always find something to scan; if that is the idea of fun you pursue.

but that is the same with music, all kinds of stories,...
