As a quick guide, this is the way I get NMS to start in VR:
1) Ensure that a link cable is properly connected to the computer, but not to the headset.
2) Turn on Computer.
3) Once the computer has properly booted, start Steam
4) Once Steam is running, put on the Quest Headset and turn that on.
5) Once the headset has started, connect the link cable to the headset.
6) You should see a prompt asking if you want to enable quest link. Select YES
7) If the prompt does not come up, it may have been disabled previously. Just go to quick settings, select quest link from there and enable.
8) This should start the Oculus App on the computer and your headset.
9) From there, select Steam VR from your library. If Steam VR is not in your Oculus Library yet, just Lift the headset from your eyes, and start Steam VR from the desktop. You should only need to do this once, after that, SteamVR will be in your Oculus Library
10) Once SteamVR is running, start NMS (while wearing the headset)
Good Luck
1) Try loading your game in pancake mode. If it crashes, then it's an issue with the save itself. If the game does load, just get to a different location. Hop into the spaceship and move anywhere else, get out and then quit the game, then try loading in VR again.
2) Try starting a new game in VR and see if that works.
