Fishing quest not registering catch

So, doing the catch 5 fish on a frozen planet quest in the new expedition. I have already caught 3 of the required "uncommon" variety, but the quest counter says I only have 1. Is this a deliberate thing? If so, that is a sucky mechanic :/ It's like 5 x common, 1 uncommon (registered in the quest), another 4-5 common, another uncommon (not registered as caught) rinse and repeat. Any ideas?

It has to be uncommon and explicitly mention it is a frozen biome fish. Have patience, it took me 30 min to catch them all.

the mission is to find 5 uncommon and ice biome fish..
every planet with water has both biome-specific fish and generic fish (can be found everywhere)
of your 3 uncommon fish, you've caught 1 ice-biome fish, and 2 generics
(if you read their descriptions it will tell you which group they belong to)

I had a glitch where it stopped counting at 4/5. I made a restore point and reloaded. It then registered the next uncommon.

There's also been a technicality found where the fish caught NEEDS to go into your Exosuit inventory to count. So, if you're exosuit is full and it dumps the fish into your starship or freighter, then it won't count.
