how to unpin stuff in your log?

You can only unpin crafting formulas. If you just want to run around without any missions trying to distract you, use the "Exploration" mission. This will just keep track of what you've discovered, you can use it if you want to really find everything in a system, but it's also good if you don't want a quest marker on your screen for awhile.

They really should give us a toggle for automatically pinning formulas if it doesn't already exist (I haven't seen it but I don't go sorting through options that often, so it coulda been added without my knowledge).

I hate having to manually go and unpin every fricken blueprint I find. The game expects you to build every single tech blueprint, and it's like... no... I don't wanna do that right now, or even ever because I found some rando weapon blueprint from a crashed ship or something.

OK, here is a tip, press H, this will cycle the lower right hand notification, and I often find a blank one, much to the joy of my eyes!

Why? it's just a checklist and since it's not a real mission it doesn't flip around all the time.

Unfortunately, what I think you're asking for isn't completely possible. The way the game is designed, something has to be active at all times, it doesn't matter what, so if you've finished the story, that works too.
