I use my ps4 controller.
Exosuits drive me nuts with the left analog stick being forward/backward tho. Shoulda just made it x or r2 like every other game in existence lol.
I use Xbone controller for flying and general movement. KBM for ground encounters and jet-pack boost.
Flying with KBM is doable, but controller is definitely better.

As you have discovered turning off tethered control for mouse or controller, is for many players a better experience of more direct response to turning a ship.
Also if you are unaware the up button on the controller D-Pad will cycle through engines, weapons, shield and balanced settings for diverting power of the ship.
In fast moving star ship battles there is also a toggle or hold function button to auto follow targets. That will automatically turn the ship towards your selected target and leaves you free to concentrate on shooting or refilling shields or selecting weapons. Can be toggled off or on for preference. Pull the brake when turning the ship.
Hot keys on the keyboard can be chosen and set for switching camera view quickly without using the quick menu. Alternatively the keyboard hot keys chosen can indirectly be assigned using steam configuration, to different controller buttons or activated with double taps, long presses etc. This can be useful to change camera view double tapping a shoulder button in a busy battle for a wider view. The auto target follow is assigned to square on the controller to toggle on and off.
Everything you complained about is either fixed there, or by getting a better ship.
Because yes, the starter ship and all low-quality ships have sluggish controls, go figure that things are somewhat realistic in that bad engines are hard to steer properly....
You get used to it after an hour or two, and after 500 some hours of NMS, I've gotten quite good at it. I can do all kinds of aerial maneuvers and stuff.
One of these days I need to make that flying tutorial video that I had ideas of.
