If you want a good summary of the content you've missed out on since you last played you should probably skim some of the big update notes on their website.
I recommend to complete all main and side quest lines. Those are pretty interesting.

Least interesting aspects of the game for me is Exploration and Base building.
I prefer exploration in Elite Dangerous.
I really wouldn't consider the Brood Mothers as "bosses"... they are way too easy/weak for that label... even in NMS terms...
Ship combat - find an "At War" or similar max unrest system, and go start raiding fleets! Not only will you get tons of loot and have to fight off sentinels - you'll eventually get pirates spawning in on you at the same time and it's crazy! :)
Sentinels on either corrupted planets, or lifeless planets. Especially using a standard multitool and having your mech out it can be a fun, long and drawn out fight over all the waves. Especially if you avoid killing the summoners for a while :)
But, that's just having fun for fun's sake. Most people are looking for guided / mission / world spawn combat that's purpose driven and I don't think NMS has that down yet. Looks like they're trying to move towards it, but who knows?
It's about base building and "exploring" and "chilling out" as you find planet that you can survive with. that's it.
Combat here is laughable that it's worse than Galaxy on Fire 2 that was released in 2010 which can be played in nokia n70.
Other than checking the box for "are there bosses in this game?" it is not super complicated to win and very simple combat AI and tactics required.
If combat is a key element you need to enjoy a game, look elsewhere.
There are derelict freighters floating in space that can be landed on and explored with combat encounters reminiscent of the eerie atmosphere of the Ridley Scott Alien movies. The procedural layouts make for some spooky jump scares.
Custom game settings can now be player adjusted to make everything hostile including creatures and environments and many other settings can be tuned for increased challenge. You can build and upgrade six weapons and 12 ships which can be a marathon to do as there are endless choices affecting their statistics.
With hostile settings dialled up many creatures can be a threat if caught unawares. The monstrosity combat encounters now have quite varied encounters between choice of planets they are found on. Getting the right balance of tech for the payer suit and weapons is a lot of fun to make combat easy or hard.
Combat is part of the overall experience of the game and encounters are found as you explore the procedural worlds never quite knowing what you might discover. The original sentinels are still always present along with pirates and the new pirate battleship encounters. which can be a challenge to defeat playing solo and even more fun with a friend. Star ship combat is improved (there is a power, weapon divert function and squadrons to upgrade). The pirate battle cruiser demands some simple tactics and timing to defeat. Like wise there are new creature bosses in the shape of 'Brood Mothers' to surprise players. PvP is also available if you want that too. The game is vast and its focus is not FPS shooter leader boards or repeatitve grind for the latest barrel and silencer kind of thing. The game and combat can though be played in first person with the same kind of thrills. The combat though as mentioned is only one part of the overall fun of the whole game, its story and many other parts to the game.
