What's the best way to beat the dreadnought solo?
Everytime I destroy all the big guns it just keeps firing torpedos which I can't destroy all of them.. and it flies and escapes.. seems kinda pointless minigame.

Get a good fighter with maxed out infra-knife. Completely ignore the torpedos and fighters. Plow through each trench at high speed. Destroy the engines, they are on the bottom rear of the ship. Go back to the trenches and target the power cores that are where the shield gens were, these do extra damage to the ship. (there are other weak points as well, weapons tend to be heavily armored) Once it's been damaged enough it surrenders. Land and commandeer the Dreadnaught for your new Freighter, Land and demand a tribute, or finish of the Dreadnaught for extra rep.

Lots of youtube videos on this. There is is a pattern that make it easy, you just have to watch and memorize it.

destroy the shield generators, then attack it with everything you've got to kill it before it warps.
There appear to be sweet spots on the ramp parts at the end of a trench that do more damage if you get lined up just right. I usually use a sentinel ship to hover in place there and plow through it with a maxed infra knife.
If you want the dreadnought to surrender, then take out the engines before you kill the shields/anti-freighter lasers and they should give up

Definitely agree with Shadow Strider: easiest in a sentinel ship. I have saved the civilian fleet effortlessly every time by following the routine they describe.

Even on Permadeath and flying the Radiant Pillar (Starter ship), the Dreadnought is easy to beat. Destroy the warpdrives, and regardless of the state of the civilian fleet, you can force the dreadnought to surrender (or destroy it) eventually. As long as you aren't slow to find the warpdrive or the trenches, saving the civilian fleet is a quick victory.

When you enter the system it will always be at a point behind the dreadnaught. Look for the right-side "trench with the shield generators and fuel rods.

Fly along the trench destroying the shield generators. Exit the trench and turn left to enter the left side trench. Can be easy to miss so look for a shield generator.

Destroy the ones in the left trench flying along to it's end. Exit that trench with a left turn and down to the engines/warp drive. Fire on those until you destroy them or get the surrender call.

Saves the civilian fleet every time. Doable with the tutorial ship on survival/perma settings as Locus said above..

You don't need to destroy the warp drive / engines unless you want to capture the dreadnought.

Go directly for the shield generators in the two trenches, and the power cores that pop up to replace them, and then the hull inside the trench for the last bit of hull integrity. Focus only on that. The engines do not start spinning up for escape until you have killed all the shield gens. At that point, it is fairly easy to finish off before the dreadnought is ready to warp out, AND before the civ freighter dies.

Of course, it does help to keep the civ ship alive longer if you take out whichever of the aft anti-ship turrets you can easily reach as you approach the rear of the trenches for your shield generator run.

Destroy the engines then destroy the big guns, it will then surrender. No need for trench running although that is kinda the most fun part.

Saw a Twitch streamer do it this way farming for an S class Pirate freighter. After 48 attempts they had it down to a science. I tried that same method and my Sentinel starship with ~73 K Infraknife damage only takes ~1 minute to destroy the 4ish engines ant the 5-6 large turrets for a surrender.

Destroy engines and then its 6 big turrets. It will surrender. You can do it under 2 min once you get used to it.

engines, shields, fuel cells (exposed after destroying shields), turrets

I do not know if this has changed with the last update but once out of curiosity if I could I landed on the civilian (sentinel style) freighter (after destroying the dreadnought and saving the fleet) and ended up buying it since it was an A class with all the sections.

Don't waste time taking out the Shields.

1. First, make a beeline to the Warp Engines, and take out all four of them.

2. Take out the all the Big Guns.

The Dreadnaught will immediately surrender.

I haven't lost any civilian fleet since doing it this way.

I even did it in a new game with the piece of crap starter ship and the stock weapons the starter ship has.

Once you upgrade your ship weapons to the Ultra Knife, you can do this in about 60 seconds

Again, DO NOT WASTER YOUR TIME TAKING OUT THE SHIELDS.

Now, with the Engines disabled and the Dreadnaught surrenders, you can board the Dreadnaught, get out of your ship, hit "F" to scan it, and if the ship is an "S" class, then go see the Captain and take over the ship (If you want it),
If it's C, B, or A class, go to the captain and "Demand Tribute" and you'll get around 6 Million Credits.
Then go back to your ship, and NOW you can take out the shields and blow it up for a bounty.
