Is it worth trying for an S rank organic vessel?
I wasted enough time on trying to get one, so I wonder if it's even worth it, or can feeding / missions eventually bring it up to par with the best frigates?

It's nice because of the living starship modules that it brings back from missions, and those level up, so it is the perfect way to get a fully kitted out living starship.

Plus they look cool in a fleet :-)

If you have lots of :nmsunits: in the bank, than it can be worth it because you'll know all its bonuses (-Fuel, Expedition Duration, Damage Reduction etc). Lower class (cheaper) Organic Frigates will level up just like normal frigates all the way to S, and as they do they will add to their starting bonuses.

Not everyone here had the game in 2022, and those that did may not have done the expedition to get the Leviathan. I don't know about OP but for example, I've been playing NMS since 2016 and my 1st Expedition was Voyagers (Aug 2023).

Is there ever a need to actually find an S class??
nanites aren't that hard to come by once you get familiar with the game, so even upgrading from C class to S class isn't really that big a commitment...
Only reason I can think of to care would be if the wild S class ships have better stats than the upgraded ones... but even that seems fairly trivial given it's the tech modules and ship type that make the biggest overall difference.

If you're really concerned about where the Supercharged slots are, the you can always save before upgrading and expanding, and then reload if it's not what you wanted...

Clearly OP wouldn't have been asking if they had an old expo reward... Your post didn't address the question at all... it's nothing but a weak flex

Btw, I don't want to make a whole new thread about it but, how does one get rid of one from the ship inventory?

You have three options, and they all require you to select it as your active ship. Once selected you can:
1. scrap it on a space station,
2. "exchange" it with an NPC for another ship (you'll get a discount based on the value of the ship you're trading, which can reduce the cost to 0 units)
3. "exchange" it for a crashed ship

If you are talking about Frigates like the OP, then you can dismiss a frigate using the Fleet Management terminal on the Freighter bridge (the terminal closest to the Freighter captain's seat).

If you are talking about living ship Starships, then only option #2 and #3 below apply:

Ah, my bad, I somehow didn't see the frigate part...
In that case, no, just send them on missions and they will rank up

Leviathan was crap at the time I've been playing since pathfinder or foundation my first expedition was beachhead but I'm not going to count that because I never fully finished it just got the Normandy and called it a day so Utopia was my first expedition I completed then I loved expeditions after that

I think of the Leviathan as a jack of all trades. That seems to be the way with the expedition reward frigate ships. They are middling statwise but multitask which is actually really nice early game. And they never get damaged, also a plus.

I love living frigates, and they find the eggs that let you upgrade your living ship too.

Be careful about feeding it, and what you feed it, because you can change its STATS, the COMBAT, TRADE, EXPLORATION etc stats.

It is worth if you like the process of finding.
According to the Wiki. total base stats of Frigate is from 1 to 14.
I have three organic Frigate with 32, 22 and 15 stats. Pluse you have an ability to feed them and change stats.

And Organic Frigates have some bonuses (info from wiki):
Organic Frigates do not have the class-locking system which restricts more powerful versions of certain Traits on conventional Frigates: for example, an Organic Frigate whose primary stat is Combat is able to have -9 Fuel Cost Traits, which are normally restricted to Support class Frigates. They also do not appear to be capable of spawning with or acquiring negative traits.
