From left-to-right: Starship Salvage; Starship Creation; Appearance Modifier.
You want the first one. There will be a holographic effigy of your current ship above it.
Once you have broken down a ship for scrap, one of your other ships will take its place.
If the replacement is in fact the ship you intend to keep, open your Quick Menu and summon one of the remaining rejects. Otherwise, return to the terminal and continue as before.
For safety reasons it is recommended that you take your time and leave using the teleportation terminal when you are done dismantling things.
I know you sometimes find them on planets but can I specifically search for them?
There are those charts but they lead me to crashed freighters and outposts as well.
I won't buy them from traders in space stations until I have some parts.

- buy them from random NPCs flying them
- find and fix wrecked ones
