Short answer: Refine it up from Silver + Gold or better yet, down from Iridesite or Geodesite (which can be obtained from multiple sources, including from Frigate expeditions).
And no, there is no way of knowing what material an asteroid will yield, however Platinum is more likely from the asteroids with a crystalline appearance.
Or use a refiner.
1 Gold + 1 Silver = 1 Platinum
1 Ferrite dust + 1 Oxygen + 250 Chromatic Metal = 10 Platinum
1 Geodesite = 250 Platinum
1 Iridesite = 250Platinum

You can find Platinum in off-white asteroids, but these also contain gold. Long thin asteroids generally contain gold or silver. Spiky asteroids, like the one in the screenshot inset, almost always contain Platinum.
You may need to warp to a couple of systems to find it as it appears to be based on the general procedural generation, which is to say not all systems have it.
Or as suggested above, just refine it.
So hard to find any more that I switched to making it in the refiner on my last playthrough.
