The Living Ship is the best ship for both traversing black holes and the center of the galaxy. It comes with a default Chromatic Warp Drive, meaning no need to waste time and resources making Red, Blue and Green warp drives.
They can also be repaired (healed) with Food items, rather than expensive, exotic and/or annoying to track down resources. These two things alone make them vastly superior to all other ship types.
Immediately prior to Waypoint all ships could be rendered completely immune to module damage by stuffing their guts into Technology slots. The disadvantage of doing this with a conventional starship was to risk the possibility of core tech duplication whenever the game checked the General inventory for the presence of those things that were previously considered immovable. This particular loophole has since been closed.
Living Ships are low-maintenance if you take good care of them. That's their whole thing.
