It's basically a more realistic, gorgeous, voxel based Minecraft. You've got total control over new games... whether you want dangerous animals, raiders, etc. or not. Lots of different animals, including horses to catch and ride... crazy good (if a bit complex at times) build and crafting system.

Agree, Rising World has indeed the best and most detailed building mechanics I've seen. Even without glitches, you can build anything, any way you want, no limits.
I have quite a few hours in Planet Nomads, kinda surprised it's no longer on Steam. I hope that means it won't disappear from my games inventory.
If non-sci-fi is acceptable, I'll give a shout-out to Green Hell. It's a game where you're dropped into the Amazon rain forest with nothing and must craft tools and weapons and gather stuff to survive. Building in it is fun, too. And it has a nice story if you're into games with stories. It does have human enemies in the form of natives, but you can turn them off if you want. Then, your main enemy is black caimans and jaguars. It's probably not a game for people who have snake or spider phobias, though. I like to play it without killing anything, because killing things isn't my thing at all, just gathering fruits to eat, but to do that you do need to turn off the large predators, too, because the jaguars, at least, will sometimes just ambush you from nowhere, with no warning, and can't be run away from.
I play both Planet Nomads and Planet Crafter; and I think one difference between them (that is, relevant to the OP - as there are major differences - such as that Nomads is long-done, and is as is; while Crafter is being actively developed. Also, Nomads is a "you crashed on the planet and need to survive and escape" while Crafter is "you landed on this planet to terraform it into a livable world (which is does very well)" - but relevant to the OP's "low violence with non-human enemies":
Nomads has several kinds of animal life - some are aggressive, some are not. You have tools to deal with them.
Crafter has, as you noted, "no violence". It's basically you alone-from-danger on the planet, from start to finish.
Depending on how much interest there is in "low violence with non-human enemies", Nomads does fit that bill.
