I have to sell the stuff off periodically, just 'cause it builds up from casual collection.
One full stack of Sodium and one full stack of S. Nitrate can last you for pretty much the entire game.
(OK. I suppose if you are using solely Sodium to power Shields...but pretty soon the large number of Starshield Batteries that you receive as combat rewards, etc, should make THAT unnecessary. And it isn't like Shields won't recharge on their own after combat.)
Edit: On most planets, there is also usually at least one common mineral that is composed ferrite / sodium as primary / secondary components.
