FYI for future saves, you can save before getting in your ship (when you get the message that sends you to the living ship) and use the portal to go to different planets to get a different model living ship... oh and after the first living ship on a save you won't have to do the quest on that particular save ever again
as for the time-gate there is a mod called 'Mission Timer Redux - MTR' which removes this and other time gates

or you can bypass all that and use the save editor to change the seed of a ship
or use the external program 'NMS Companion' to backup/restore fav ships to other saves
(there is a discord to share backups of ships/MTs/pets/freighters/locations)

legit Lol, my first option i.e. save (save point/beacon for a restore point save) B4 getting getting into the ship to get the message then using the portal instead of the ship to get a different model (reload the 'restore point' if when you fly over the ship it is 'fugly') may not be 'legit' by your reckoning but it beats getting a fugly ship after the annoyingly time-gated quest... still something to ponder for future saves

Be careful when messing with your PC clock. This may deactivate some copy-protected software and prevent some secure websites from working properly. It's rare, but it may happen.
just play the game and don't be so impatient... start the mission and when you get to the time-gate(s), go back to exploring and building your bases or whatever you normally do...
