Guess I'll uninstall for the 5th time
If the timer doesn't trigger, you might be able to force it by engaging a sentinel and then hiding again, or hopping in your ship and leaving it and then hiding.
Digging a tunnel for yourself or going inside a building should basically guarantee they can't get to you. If they have line of sight, some might still try to shoot at you though. And the dog-version seems to have the uncanny ability to phase through dirt (also a bug) so be wary around them.
From my experience, even if I don't re-engage them, as long as I stay hidden they eventually give up (even if it takes a long time for them to). However, they will never stop coming for you if you're in your ship -- unless you have the ability to kill 5 waves of them. So if you have any stars, land your ship and hide asap.
And the waves shouldn't be endless, although they might feel endless. After clearing each wave, you gain one star. After you clear the 5-star wave, sentinel activity should completely stop unless they're the corrupted sentinels (which I think you're unlikely to see if you just started the game).
I don't even have a problem getting away from them in space... boost away for a while, doing barrel rolls to minimize the hits you take from them lighting up your rear end, and eventually your pulse drive will re-activate so you can escape.
It's actually more annoying (in my opinion) on the ground, especially before you learn how to sprint/melee/jetpack combo your way to 50+ meters per second of travel speed; it's almost easier to just slog through the 5 waves of sentinels to end the encounter than to try to run away.
The easiest way to do this is to save and reload, but you can also dare to start the fight, make sure the number of stars has increased, and then enter the building or cave again to deactivate the combat state.
There are other means, so it is better to find the method that suits you best depending on your surroundings.
