Quote from today's announcement:
"No Man’s Sky for Mac is free to millions of players who already own the game on Steam. And for users who use both PC and Mac, cross save is supported between both systems, allowing players to jump from a PC to a Mac laptop, or from a Mac mini to Mac Studio."
I went ahead and copied my save folder from PC as a backup in case the 0 on my Mac overwrites my PC save when this is fixed, but it sure would be swell if it worked. I need my 500+ hours worth of stuff :P

Not an ideal solution, but you could use GeForce Now for a month (can't remeber if there is a trial), and open the game there and let it save new versions of your save and try that.
I do have GeForce Now and am about to try the trick to see if it works, it depends on whether GFN has updated to latest PC version yet.
Just checked, there is a free tier for GeForce Now, so Wizardexiles you should be able to use that to open your old save, resave and make use of your save.
Can confirm that this works!
Opened the GFN (you can do it without a subscription, you would just need to wait about 15 minutes or so), loaded the last save, resaved it and quit the game to the desktop (to sync with steam cloud).
After this, the save appeared on my mac!
Thanks tarasis, for the advice :)
