- Voltaic (This is the craftable set. They cost extra when purchased with motes, and also don't stack. They also say "Voltaic Component" instead of "Autophage Staff ___" in their tooltips)

- Reclaimed (This one has two head parts, "Claw" and "Head". Also, for whatever reason the backbone is named "Recycled Pole" rather than "Reclaimed Pole", but it's definitely part of the same set because the pattern matches the reclaimed core piece.)
In total, there are 252 (7 * 6 * 6) staff combinations, and that's before considering color and class variations.You cannot, you can only craft a new one at the autophage's station. The terminal you craft at determines what combination is of what class/color.
Yes and no, they are part of a new staff. Since it's still a multi-tool, you can't really customise it, so you need to craft a new one. Get new part, make a combination, then go from terminal to terminal until you find a color/class that you like.
It does look like you can improve the class at the space station in a similar way as for the other multitools.
