Ya, it sucks they need a better way to do that.
The best systems are 3 star and heavily in conflict. Once a Freighter Rescue Mission becomes activated through a warp, you can hit reload manual save? Not the auto save. So always save before you warp by landing at a station and jumping out of ship then back in.
Find a system that has a freighter style that you like by reloading your manual save without landing or jumping out of ship. You have to do the same with a system that has one you like. (This keeps the event going as long as you need it to and even if you have to kill the game for a while.) You rescue. It calls you aboard. You board and jump out but it will not save at that moment. Shoot your scanner to the side of the freighter to check its class and reload your manual save until you finally get an S class. (People say class doesn't matter.... But it does, when it comes to your frigates success and rewards.) It's highly worth being stuck in a time loop till you succeed.
Talking the caption will end the event. So don't talk to them till you know it is an S class.

Focus on those unless you want to take even longer to find one. Outlaw systems being 2 1/2 times better than even the high wealth ones.
I've tried that route and did not have any luck on the save that I was on. It doesn't mean that it wouldn't work for others or on a new save. But it isn't always better 100% of the time. It definitely IS worth a shot though.
5% is always better than 2% which is always better than 1%. There's no anecdote that changes how numbers and probabilities work. Your lack of luck is also just how things work when they are a probability and not a certainty.

Find a system with a rich economy and a moderate level of conflict, and make you you 3rd jump is in to that system.
Save before jumping (at a station for example), and do the rescue mission. If the freighter is not S-class reload your save and do it again, the freighter will be reloaded and it's class rerolled. It might take a will but this is the most reliable way to do so.
IMPORTANT: Make sure to disable multiplayer as this exploit only works on single player mode.
If you want an S Class Capital Freighter, it's a bit more complicated and time consuming. You need to play the game for at least 3 hours and warp a minimum of 5 times. This will trigger the pirate battle in which you kill the pirates then board the freighter and buy it...if it's the one you want. If it's not the one you want then you are kind of out of luck. You will need to try again by playing another 3 hours and warping 5 times to trigger the battle again. Just make sure you're in a different system because the same Capital Freighter will spawn if you're in the same system. Now the trick is that if you warp into the space battle and see the Capital Freighter you like, instead of fighting the pirates, you go straight to the space station and get out of your ship making a restore point. Then you fly back out of the space station and the pirates will be gone but the Capital Freighter will still be there. Land on it, if it's not an S Class, then just restore and try again. You may have to restore your game upwards of 20 times to get an S Class. It took me 6 or 7 tries.
There are several YouTube videos out there describing how to do it. Check out Hero2U on YouTube. Only look at videos that take place after the Fractal Update. I know the locations all changed after the Fractal Update so anyone that made a video regarding where to find a particular Capital Freighter was no long valid. Unfortunately, after this latest Interceptor Update, that may have changed all the locations again.

Or if you do not wish to claim the freightor as a prize instead of skipping the event and buying it directly, fend off pirates call your own freighter and create a restore point there.

This is wrong.
Capital freighters only appear during freighter rescue, but the class of what freighters do appear independent of the Space Rescue can still be S-class. And, as I mentioned already, the probability of it being S-Class follows the same exact variable as starships and multi-tools.
This is also wrong. It's 3 hours and 5 hyperjumps (as the next person who replied indicated).
And where @Sumgumption said "high conflict" is better is also wrong. it's great that he found his golden unicorn in a high conflict system. But the fact that it was high conflict was not relevant to that find.
@Hagalaz's info is solid though. Assuming you are after a capital freighter. If what you want is a system freighter, then follow the advice given in @Johny_Drifter's first paragraph. It also has the advantage of being much faster, seeing as you don't have to deal with that 3-hours-of-play thing.
I went to nmsce.com and picked out the design I wanted and then went to the system and was able to save scum form the station and able to get an S class within a half dozen tries because there was 3-4 that spawned in the system each time.
