This doesn't include the Sentinel / Interceptors though. Theirs would be far more complicated anyway.
No. There is no way for players to pick their own parts or colors. This is a commonly request feature; but there is also push back again that idea from players that believe ship hunting and coordinate sharing is a core game mechanic (I am not one of those players).
