But on PC, yeah, select new game, and somewhere on that screen, I think to the right hand side, was something to click for the expedition.

Just started No Mans Skyx a few weeks back. So you mean to say, to do these voyage things, I have to abandon my old save every time and start a new game? That is a pretty horrible system...
These are mini-stories and provide way too many freebies. I am so glad it is not part of a regular game. It would ruin the fun of hunting and grinding for upgrades.
Not abandon, but you do start a new game in one of your Save slots. Once you are done with the Expedition/completed all the Phases you care to, you've unlocked all the goodies for all your files to pick up at The Anomaly and you can abandon the Expedition save and go right back to your Main Game save (Or keep the Expedition save if it's better off than your Main Save. Some new players have that happen).
Basically, they're just shorter-play jaunts that show off the new update gimmicks, give out some unique rewards for doing it for your account, then are meant to be ditched for the next one while you play your main save between them. Sorta like a seasonal character from Diablo 3 or 4, if you're familiar with that whole thing.
If you don't care about the Expedition Rewards then you can just keep playing your Main Save. Nothing in the Expedition gameplay-wise is exclusive or whatever. You'll find it in the normal save's worlds (Though I believe all the Autophage stuff doesn't start until you finish the main story)
Hope that helps!
