Having said that, I don´t recommend NMS anymore either. The game is bloated with weirdware that will most likely annoy a lot of newcomers.
Starfield is just another illusion from lil Todd that you fell for.
But you can get two NMS for the price of one Starfield, and "two heads are better than one"
There's a number of ways of presenting a bad game as being good. That has come to pass quite often already.
Anyways, I honestly at this point don´t even know if I want it to be good. I think it would be better for gaming if lil beth would just crumble to dust. I'd rather see they fall before they ruin Elder Scrolls franchise completely.
TLDR: If you like open sandbox games like Minecraft but want it in space with better graphics then NMS is right for you. If you wanted a more RPG type of gameplays then wait for Starfield.
Depends what type of space games your dad likes to play. Not knowing his preferences I don't want to comment for or against.
If your dad likes space games I think this would be a good game to start with, it is a bit of a slog in the beginning as you have to build up your resource piles, but it is a very casual game in terms of the gaming industry, there isn't a lot of difficult mechanics to learn as an older person and the game is very casual in terms of combat (It's mostly exploration and base building). If your dad likes those aspects of gaming I think he would very much like NMS.

No Man's Sky for everything else.
I play with my GF in NMS. It's also nice to see other players running around if you do the expeditions and or when you visit an anomaly.
NMS will have a greater replay value.
If you purchase games from an ethical standpoint, then NMS hands down! Hello Games has released 20+ updates since the games launch, each update making the game better and better. And they have never charged a single penny.
Bethesda/Zenimax however are about as greedy as it gets.
You can get a nms key for a very cheap price (use the internet). Despite its blatant flaws it is a good space sandbox, so you can safely expect the game to be worth its price in terms of replayability.
It is also very easy to play minus some unintuitive and buggy stuff that can be annoying in the beginning. It should be fine for your dad.
