However, there are (literally) 18 quintillion planets in NMS spread across 256 galaxies. I don't know how many players are playing at a given time, on average. but I'd be surprised if it's even one million. A quintillion is a million million million. So the chances of you randomly being on a given planet with another player is infinitesimal. (Math isn't my strong suit. I'll let a more math-y person do the actual calculation.)
That said, there are some places in the 'verse where you're more likely to see other players. For instance, the closer you move toward the center of the starting galaxy, the higher the chances, since getting to the center is the goal of the main story line. Also, if you do any of the missions offered at the Nexus on the Anomaly, you'll be on the same planet as other players because everyone's sent to the same place for those missions. But if you just randomly exploring around, you're not likely to ever see another player, other than on the Anomaly.
Any time Hello Games runs an expedition you can find lots of players in the areas where the expedition is happening.
