regular game or expedition?
For whatever reason, HG has picked some standard locations in Euclid to start people off. So with time, it is now not uncommon now to start in a discovered system or find discovered systems nearby. Once you move 500 to 600 LYS in any direction you should be in less explored areas. It is actually uncommon to find discovered systems/planets because the galaxy is a very big place.
Your other option is to change galaxies. Just follow the main mission and they make that relatively easy to do with a choice of four galaxies. Since everyone starts in Euclid galaxy, it is the most "trampled" by interlopers.
NOTE: If you have Multiplayer on, and go to the Anomaly, other players may follow you home and start discovering systems nearby or even in your system if you have not uploaded your discoveries.
If you want to be alone, you can turn multiplayer off and no one will be able to see or follow you.
Regular game
As others have said, every player starts in the same galaxy. And not only do we all start in the same galaxy, we all start at the same approximate distance from the center of the galaxy.
So over the course of 7 years, millions of people logging in for the first time has caused a 'ring' of systems to be discovered around this galaxy. Once you move out of the ring there's a good chance you will NEVER see the trace of another player again (except maybe near the center of galaxies).
I usually just make a new save if I happen to be 'born' on a planet or star system with someone else's name on it.
Yes, multiplayer is completely disabled, I will be aware when entering an already discovered system,
Turning MP means you will not see other players and they will not see you. But you will see any bases or beacons placed by other players. If you are playing expedition mode you will see a lot of bases and beacons. If you are not not playing expeditions then just hop to another system. Only a tiny fraction of systems game have been visited by players .
