Space engineers might be worth looking at as well. You load scenario's though rather than a fixed game world, so not sure how that works (only played it about 20 mins during free weekend, didnt catch my interest).
Then there are the seemingly countless bugs, and that with the game at release. Resources will vanish, multiplayer desyncs, your vehicles will sink into the ground, the game crashes often, and so on. Occasionally you'll be launched into space while mining or just walking around, for no apparent reason.
When the game was pushed to 1.0, lots of promised content was canceled. Content that could otherwise have made the game feel more enjoyable to play and not quite as empty.
NMS has everything and more. Lots of exploration, challenges and building. You'll face hazardous environments, enemies and other lifeforms throughout the several galaxies there are, all filled with solar systems and planets you can visit.
Yes, there are bugs in NMS, but they're minor and usually you can work around them.
The real question is, what do you have time for? NMS you can play for weeks and even months, while Astroneer is more of an afternoon thing.
One plus for Astroneer; it does have a flattening tool for leveling the ground, which NMS really could use.
* Space Engineers is more of a resource gathering and management game, than it is an exploration game. But, spaceships are not predesigned as in Astroneer and NMS, and can even be programed to do certain tasks, which in itself can be quite fun, provided you know how to program.
NMS has water, oceans & lakes. You can swim or use an exocraft to explore on the surface or underwater.
NMS also has space stations, some buildings & ruins on planet surfaces and underwater.
