Ship Classes
Okay so I have no idea what "Ship Class" represents or how to tell if it's better or worse. Like are C-Class fighters and D-Class freighters? idk, and I can't find anything except that S-Class is good. Is there a guide or something I can follow? Also how is "upgrade class" and what does that do/is it worth it?
Just altogether very overwhelmed and confused.

Exactly. Here is my technical understanding:
C: steaming pile of crap:steamfacepalm:
B: old fridge pulled out of the landfill :steamsad:
A: shamefully adequate ford pinto
S: holy holy holy now my life has meaning :steamhappy:

Honestly, with freighters I never saw a point with better class. The inventory space is kind of irrelevant with the storage units, and I never use it to warp.

But... but... you don't have the shiny yellow S declaring your worth as a splendid NMS player, nay, as a magnificent human being?

As mentioned, S>A>B>C
X can be better than S or worse than C... so... X is a good name for it.

But there's more to it than that.
Fighters, Explorers, and Haulers come in sizes in addition to classes.

Regardless of class fighters can spawn with.
Small, 19/4/4 slots max
Medium, 29/5/6 max
Large, 38/12/8 max

A medium fighter has the thick rounder nose and looks like it sits on a frame.
A large has a truncheon on each side, like the 'feet' on a sea glider.
And the simpler narrow/long nosed variety (and the little pugs like the starter ship) are smalls.

Explorers have the big arm styles for medium, and the barrel or double barrels on large.

Shuttles don't have sizes really.

And all exotics are smalls.

All exotics should be expandable to max size with cargo upgrades imho.
You can upgrade any S class to max slots.

Value wise my Exotic is worth 230m at max 48 slot. S class Hauler at 130m at max. But S Solar at 48m? Sheesh

And sometimes X for upgrades. X are pretty much RNG value. Sometimes not even as good as C class, sometimes better than S Class.

You never stop learning. Thanks for the hint.

Most of the OP's questions have already been answered. The only thing I can add is that your odds of finding an S class ship are better in a high wealth system (other than exotics, which are always S class, and in my experience, can be in low and medium wealth systems).

I can also say that I have camped for hours for a S class large fighters, but in hindsight those hours would have been better spent buying an A class large fighter, which are easily found (at least in a high wealth system), then doing more fun things to do to obtain 50,000 nanites to upgrade it.

For me, that was making stasis devices and fusion ignitors, which for sure took a lot longer. But after I could make them, I could afford to buy any S or A class ships, then scrap them for nanites to obtain S or A class modules, which I could sell to any module vendor for nanites. An added bonus was obtaining a lot of starship storage augmentations as well. Although the 300 million units for buying ship storage upgrades helps to relieve some of the storage problems I have from being able to make stasis devices and fusion ignitors, since I can't sell them without hitting the units cap.

Just saying it was a lot more fun, at least for me. Explorer types can probably gain the nanites and units a lot faster. Dunno about combat types these days, but hopefully the devs have made it lucrative for you.

I've also read that cooking is pretty lucrative for nanites.

As always, YMMV.
