If that doesn't work, use the save editor to reskin it.
Change the seed of your ship: http://www.nmsseeds.com/
Well you copy and paste the seed into your save file... AFTER making a backup.
The save editor also has a seed generator that just picks a random seed for you. It is a little tedious to figure out what you got sense I don't think there is a way to see it unless you go in game.
I had this happen to me once, but I had multiplayer enabled. The game engine has a chance to switch starship models on the player (very very rare, but it can happen). I wasn't upset with the change but it could've went the other way very easily.
You could also reload a manual save from before the swap or just learn to use the save editor and find a public seed that makes you happy. I would stick to matching starship type just to be safe.
Might want to do a search for using the editor here on the forums. The editor is a github and you also need java.
