https://nomanssky.fandom.com/wiki/Galaxy
Click on the galaxy name to see what type it is. Then you find the galaxy nearest you and make a plan to get to it. There are many ways to do this, some take longer than others.
There is one with more lush planets, one with more extreme planets, one that it's balanced, and one that has more exotic planets.
All of them are full of life.
Honestly, if you did not know ahead of time what type of galaxy it is, it can be hard to tell the difference between the galaxy types.
The benefit of that method is that you can jump to that player's base, in the other galaxy, without having to travel to the galactic core and without getting any ship damage.
Otherwise, you have to get to the core of your current galaxy and make the jump the old fashioned way.
You can not get to another galaxy via a portal (the huge black building on the planet where you enter glyphs). You can however go to another galaxy if you teleport (circular blue shiny thing on your base) to a base of another player which happens to be in another galaxy.
In muliplayer though, you can group with people at the Anomaly who already have access to other galaxies and they can teleport you to any galaxy they have bases on.
