Yes all the updates are free.
There are no DLCs so if you buy the game you get the result of all existing updates and will get any future updates for free. (Of course that is subject to change but seems highly unlikely they will start charging for updates)
Why would do you think it will go gree on epic?
NMS is unlikely to go free on Epic. Hello games business model relies on generating revenue by selling new copies of the game to people that don't all ready own it. They get a flurry of new purchases when they release a new expansion which is the reason that bug fixes have such a low priority. They have to generate new content to drive new sales. Time taken from that to fix bugs results in reduced revenue.
I think Epic is paying for the free games. They have a thick wallet(from Fortnite most likey). They want to get more people on board their store. So it isn't costing the game developers.
GTA 5 was free on Epic at one point.
No Man's Sky isn't available at all on Epic, and I doubt it would immediately be free if it were added, so you may be in for a long wait if you want to go that route.
Honestly the game experience with the developing years and update was better because we always kept coming back to check what was new
