I guess the maps are the only way out once you make a choice. The downside is you lose all your current progress if you bolt. The settlement mini game is just not that much fun to do it serially. Spoiler alert: there is no profit motive. It is strictly for laughs. On my best day at an S class settlement I could pull down about 50,000 credits...after several weeks of getting it to that point.

I'm pretty sure you can't do that. You'll have to live with the mission in your log forever.
you can't. if you choose to have a settlement you have to deal with it
My A-Class settlement, named Mush Eyesilly : D makes between 20 million and 30 million in total which I collect by selling the trade goods and cogs it produces, every so often when I return. At the same time visiting the three settlement markets I collect the high value items to make stasis devices and sell those at 15million a pop each which is a nice bonus. (need the blueprints to craft them of course). Probably if I visited it more often like once a day and paid attention to 'help we are under attack save us!' messages from my slaves... they'd be even happier and maybe reward me with S-Class status again : )

A brief visit is all that's needed now it's up and running. More frequent visits It returns less millions but still millions, and it all adds up. It's fully set up with balanced production and happiness and chugs away like the freighter fleets returning loot without me intervening, except to defeat corrupted sentinels every so often. They're easy to defeat from standing on a roof top and I have marked a sentinel pillar and disable all sentinels across the entire planet very quickly if I stay longer.

Once you have a character that has everything maxed out, they continue to provide useful high value items too that I don't have to repetitively craft. So a quick passing visit to the settlement I pick up those ready made ingredients and other items I am short of, just by hopping from one stall to the next. Usually riding the Pilgrim exobike or companion or hopping from roof top to roof top for a laugh (as I get lost). They quickly restock too.
If you place landing pads you can also buy items from random pliots that come and go.
It can be amusing to visit other player settlements or random ones every once in a while, as I forget the three major races have different design styles and the layouts are procedural too, which makes them more interesting in what can be found.
